I hope it is not too late. Drawing the trademark eyebrows took longer than I thought...
Spurred by unsavoury comments about penguins in a Seabourne and Roach Video, I turned the penguin into a mythical beast.
Behold The RandLer, a Flying Penguin.

He’s not a potato or an artichoke; He started life as a musical note.
But then he grew a great big horn With antlers on top; and a legend was born.
He’s known to break out into song; It’s Rhett and Link all day long;
He may grumble, but he doesn’t growl; He’s the inspiration for the face/butt towel.
His eyes are rimmed with blackest plastic; He sees himself as quite fantastic.
One eyebrow up, the other down, Is that a smile or is it a frown?
He has hind legs, three arms, a claw, Two fangs that hang down to his jaw;
He wears a beard like Fu Manchu; But instead of one, this guyhas two.
He isn’t fast, but he isn’t slow; Those Velcro shoes stay put, you know.
The Randler's striped and polka dotted; He can't hide because he's been spotted.
He not a winner, that I know, But he was fun to draw and fun to show.

I finally got my act together and pumped out my entry for the KBE!
Here is what I imagine for RandLer:
I figured why not make the mascot mythical beast a combination of both Rhett and Link's Mythical Beasts. I'm sorry if someone else has thought of this first, it's late and I just didn't have time to look back through all the other entries to find out.
I submit:
"RandLer the ShahbaSquatch"
If you can't read the captions... I tried to make it in true mythical beast form - combining parts of other animals and creatures. The head is from a hawk, and the wings are eagle's wings (both are elements of the Shahbaz, Rhett's MB). The body is that of a Sasquatch, large and hairy (to symbolize Link's Chiasquatch).
