While Rhett may not be the DICE GENIUS* he thinks he is, the considerable achievement in scoring 6 of 6 on today's Cheese Board Challenge has certainly earned him the destince honor of being titled . . .

Next came Rachel: this started out as a ‘regular’ hard goats cheese. One day a particular cheese developed some black moulds which Pete washed off with brine. This set off bacterial action which affected the character of the cheese in a way that he liked. Today’s Rachel always uses this ‘washed rind’ process and has become their biggest seller. It’s a star item, and as Pete points out, no-one else in the country makes a washed rind goats’ cheese. It’s probably a niche cheese ... but they’ve clearly made it work.

White Lake's Pete Humphries says that "Rachel was named after a friend of mine - like the cheese she is sweet, curvy and slightly nutty".

What time do you get up?

I set my alarm for 6am on a normal day and I try to get to work for 8am, after saying that I can get up any time up to 8.30ish.

What do you drink with the cheese that you make?

Red wine or Ale.

What’s your favourite cheese anecdote?

I like the one about the cheese maker who named his cheese after a girl in the hope she might sleep with him!

If you weren’t a cheesemaker what would you be?

If I wasn’t a cheese maker I would be reasonably well off, or an accountant.

What is your favourite view?

I like the view from the top of White Nancy.

What’s your greatest extravagance?

I’m not really that kind of person, but I suppose the odd expensive bottle of red.
