Thought I'd drop in a couple food blogs I've been enjoying recently. :)

Budget Bytes: https://www.budgetbytes.com/ This blog isn't strictly vegetarian, as it's focused more on low-cost but filling meals; however, the blogger does make sure to include a good mix of vegetarian options, so I think it's still pretty useful.

I know it has several dishes under the various categories.  I'm adding today a great pasta salad recipe, which I've made for large groups (150+) and it's always gotten good reviews.

P.S. -- because my daughter has health issues with meat proteins, she became 100% vegetarian about 9 years ago - - the Mexican Lasagna recipe which I posted long ago is easily modified by just checking to be certain all the ingredients are "veggie friendly"

*** make sure the burrito wraps / tortillas are made with vegetable shortening instead of lard

*** use DAISY brand cottage cheese and sour cream (no gelatin)

*** check the refried beans and black beans that they contain no animal fat

*** substitute Quorn grounds for the beef
