I discovered this little wonder at a ladies group meeting where everyone had to contribute a dish. I would not leave without the recipe!

Oriental Noodle Slaw
2 packages Oriental Flavor ramen noodles
1 bag cole slaw (the one with shredded green and red cabbage and carrots)
1 cup chopped scallions (green onions)
1 cup sliced almonds
1/2 cup roasted, salted sunflower seeds

Dressing:
3/4 cup oil (I always use EVOO, but you can use your favorite)
1/2 cup sugar
1/3 cup vinegar (the receipe calls for white but I used a pear infused white balsamic...experiment!)
2 packages seasoning from ramen noodles

In a large bowl, break up the ramen noodles into very small chunks.
Layer the cole slaw on top of the noodles.
Sprinkle the scallions, almonds, and sunflower seeds over the top.
Prepare dressing and, while stirring (it will be syrupy and want to separate) pour evenly over the layered salad.
Cover with plastic wrap and refrigerate for 8 hours (to soften noodles).

I'm telling you, this is awesome! It's quick, easy, and tastes amazing! It's also surprising and original, which will make you a bit hit at your next pot luck! Just remember to plan ahead because it does need to soak a long time for the noodles to soften.

I can't eat food with MSG. What can be subbed for the seasoning from ramen noodles????
Where was this a month ago when I needed to take a salad to a neighborhood picnic? Sounds yummy, Lynn. It's a keeper. I like the idea of EVOO and infused vinegar. Thanks!
Jeannette, any seasonings that have an Asian flair would work...a little garlic, lemon peel, onion powder, and some black pepper would probably work great. Go with savory flavors to offset the sugar.

This sounds a lot like a salad I had a 4th of July picnic. It is really good!! Thanks for posting!!
FIESTA CORN SALAD
4- 16 oz. cans whole kernel corn, well drained
1 sm. can chopped green chilies
1 lg. yellow onion, diced
1- 8 oz. pkg. cream cheese, softened
1 diced bell pepper
2 cups diced fresh tomato
Salt and pepper to taste

In a large salad bowl, mix chili peppers with softened cream cheese until creamy. Stir in drained corn. Fold in all remaining ingredients. Allow flavors to blend at least 2 or 3 hours in the refrigerator before serving.
Lynn's Oriental Noodle Slaw is delicious and easy to make. I made it for a picnic and it went over well. I made it the night before and added a bag of broccoli slaw to the mix to add texture and color, then increased the amount of dressing slightly to compensate. I also used the pear infused white balsamic vinegar as she suggested. I love balsamic vinegars anyway; it added a nice flavor and body to the dressing. Yummy and easy! Thanks, Lynn.
