I discovered this little wonder at a ladies group meeting where everyone had to contribute a dish. I would not leave without the recipe!
Oriental Noodle Slaw
2 packages Oriental Flavor ramen noodles
1 bag cole slaw (the one with shredded green and red cabbage and carrots)
1 cup chopped scallions (green onions)
1 cup sliced almonds
1/2 cup roasted, salted sunflower seeds
Dressing:
3/4 cup oil (I always use EVOO, but you can use your favorite)
1/2 cup sugar
1/3 cup vinegar (the receipe calls for white but I used a pear infused white balsamic...experiment!)
2 packages seasoning from ramen noodles
In a large bowl, break up the ramen noodles into very small chunks.
Layer the cole slaw on top of the noodles.
Sprinkle the scallions, almonds, and sunflower seeds over the top.
Prepare dressing and, while stirring (it will be syrupy and want to separate) pour evenly over the layered salad.
Cover with plastic wrap and refrigerate for 8 hours (to soften noodles).
I'm telling you, this is awesome! It's quick, easy, and tastes amazing! It's also surprising and original, which will make you a bit hit at your next pot luck! Just remember to plan ahead because it does need to soak a long time for the noodles to soften.
