Brown paper bag taco chips
1-4 roma tomatoes
1 sweet onion
1 bunch cilantro
1 bunch green onion
1 can sliced olives
1-2 fresh garlic cloves
fresh grated monterey jack, cheddar and pepperjack cheese (however much you like)
2-3 Fresh grilled chicken breasts
Wash and dice vegetable and the tomatoes toss in a big bowl. Add the sliced drained olives and garlic one clove at a time until you are happy with the taste. Mix in lime and salt the same way taste testing the whole way through. I cna usually tell it is going to be perfect when the colors are all perfectly blended. Then add in the diced chicken breasts and stir up.
Preheat your oven to 375, put taco chips on a baking sheet, cover with chicken veggie mix, top with cheese and bake until cheese is melty and lovely.
Then you can die happy
Coincidentally, this is basically how you make guacamole minus the olives cheese and chicken. The trick with the guac is that before you dice up the tomatoes, scoop the seeds out. Then chop up about 4 avacados and mix them into the veggie lime garlic mix and Shaboing! You got yourself some friggin incredible guacamole.
