This is by far the best appetizer I've made for food days at work (or others have made). This is not my original recipe, I stole it from someone else. Beware--if you make these and share them at work/home/holidays, you will be asked to make them EVERY time! The good thing is, they're easy to make and there are never any leftovers!

Tortilla Roll Ups

Two 8oz. pkgs cream cheese (room temp)
1 packet taco seasoning
4 oz. can chopped green chilies
1 bag shredded cheese (I use 2 cup bag, cheddar/jack blend)
1 package of large flour tortilla shells (don't get the smalls)

Optional: chopped black olives (I leave out black olives, as that's a deal breaker for some folks)

Allow cream cheese to soften to room temp. Combine cream cheese, taco seasoning and green chillies and spread on shells liberally. Sprinkle with shredded cheese. Roll up tightly. Wrap them up even tighter using Saran Wrap and chill for several hours, or even better overnight.

Cut into slices and serve. Original recipe says to serve with salsa--but I skip that, heck they're good enough on their own.

My hubby LOVES these cause I cut off the ends that don't make perfect slices and he gets to eat them all! Then I have to hide the rest in the fridge overnight. When I take these to work they are gone by noon.

Easy & Yummy Baked Potato Wedges

4 unpeeled baking potatoes (2 pounds)
2 Tablespoons olive oil
1 teaspoon dried rosemary (crushed)
1/2 teaspoon salt
1/4 teaspoon pepper
***optional*** any other seasonings you'd like to add, maybe some basil, garlic salt/powder, Italian seasoning

1) Cut potatoes lengthwise into wedges; place in a greased 13-in x 9-in x 2-in baking pan. (I use a baking sheet) Drizzle with oil. Sprinkle with seasonings; stir to coat. (I use a silicone brush to spread the oil)

2) Bake, uncovered, at 400 degrees for 45-50 minutes or until tender, turning once.

Yum....typing this recipe is making me hungry for these delicious wedges. My sister's kids love these wedges. :)
