No sauce sounds weird to me, but the no forks part sounds fun!
In Texas it's all about the quality of the meat and the smoke. A joint that has sauce must be hiding something. Another interesting thing, different from other parts of the country, is how BBQ is sold and served here. At most Texas "country" markets like Kreuz (as opposed to those big-city chains) you walk up to the counter and order your meat, which is weighed and served on butcher's paper with sliced bread, rolls or crackers. That is why on the menu everything is priced by the pound. Sides are typically just sliced onions, jalapeños and dill pickles, although occasionally you might find one that offers beans and/or coleslaw. Kreuz actually expands a bit on their sides . . . but still no forks? Go figure!
